We have been overwhelmed with ideas and suggestions on how to use our new Paschal's World Famous Chicken Batter Mix. From die hard meat eaters to vegetarians, there's a Paschal's for everyone!

Paschal's Oven Baked Fried Chicken

Here's a healthy and delicious alternative to "traditional" fried chicken.

You will need:

1 whole fryer cut into parts

1 3oz Package of Paschal's World Famous Chicken Batter Mix

1 cup of milk

PAM, Crisco or any other non-stick cooking spray

Preheat oven to 400 degrees Fahrenheit. Spray a large cookie sheet with the non-stick cooking spray. Rinse and pat dry chicken pieces and place milk into a shallow bowl. Open chicken batter mix and place in another shallow bowl or a small brown paper bag. Take chicken, 2-3 pieces at a time, dip in milk and then batter mix, place on cookie sheet. Continue process until all pieces have been coated and placed on the cookie sheet. Spray chicken pieces with non-stick cooking spray and place in oven for 20-30 minutes, cooking times will vary according to specific oven manufactures. When chicken is done, remove from cookie sheet and serve.

Variations:

Paschal's Oven Fried Buffalo Chicken Wings

Follow recipe as above, but after removing chicken from oven, in a shallow container with a top, mix 1/2 cup of hot sauce (we like Frank's Red Hot Hot Sauce) and a 1/4 stick of melted butter and toss chicken pieces in the mixture. Serve with celery sticks and blue cheese salad dressing.


Fried Vegetables

Vegetarians need not feel left out. Here's a recipe for crispy fried vegetables with that great Paschal's taste!

You will need:

A selection of clean, peeled (as needed),sliced fresh vegetables, such as onion rings, squash, zucchini, mushrooms, eggplant, green tomatoes, etc.

2 packages of Paschal's World Famous Chicken Batter Mix

Follow package directions, substituting your selection of fresh vegetables for the chicken. Fry vegetables until golden brown and crispy.

Side Dishes

Company’s Coming Green Beans

Ingredients
1 lb of fresh green beans, cleaned and trimmed
1 small onion finely chopped
2 strips of uncooked bacon chopped
2 Tablespoons of Red Wine Vinegar
1 Tablespoon of Sugar
1 Teaspoon of Chopped Pimento
Salt and Pepper to Taste

Halfway fill a large fry pan with water and bring to a boil. Blanch green beans in fry pan for approximately 7-10 minutes, until tender but still firm. Drain beans and put aside. Thoroughly dry fry pan, heat and add chopped bacon. When bacon begins to color, add chopped onion. Cook until bacon is done and onions have softened. Add the red wine vinegar and sugar and continue cooking until mixture is syrupy then add blanched green beans and toss to coat. Cook 5-10 minutes more until beans are done. Garnish with chopped pimento and serve immediately.

Collard Greens

Ingredients
2lbs of Fresh Collard Greens, washed and trimmed
2 Smoked Ham Hocks
1/3 cup of bacon fat
1 jalapeno pepper
1/4 cup of sugar
salt and pepper to taste

Fill a stockpot halfway with water and add ham hocks and jalapeno pepper. Cook one hour. Add collard greens, salt and pepper, bacon fat and sugar. Continue to cook approximately 1 ½ hours until greens are tender.
